After making the Hot Cocoa in a Jar, we still had a bit leftover candy canes, and the boys wanted to make cookies after having a great day at school.
Jack went and grabbed the candy canes while Luke helped me compile the ingredients. Luke then said he wanted chocolate cookies, so we decided to add some cocoa and chocolate chips. I was in shock since Luke isn’t big on sweets, but we chose to go with the flow.
No one was harmed in the process of making these cookies, but needless to say, we were occupied in making the cookies and never decided on dinner. We did have dessert covered, though.
What is the definition of Candy Canes?
Per Wikipedia, a candy cane is a cane-shaped stick candy often associated with Christmastide and Saint Nicholas Day. It is traditionally white with red stripes and flavored with peppermint, but they also come in a variety of other flavors and colors.
We were even kind enough to share some with our neighbors. However, the ones we kept only lasted three days. These were Luke’s favorite cookies that we have made. He has been asking now for us to make more.
Chocolate Candy Cane Cookies
- 2 1/4 c all-purpose flour
- 1/2 c Baking cocoa
- 1 tsp baking soda
- 1 c butter 2 sticks softened 2 sticks softened
- 1 c packed brown sugar
- 3/4 c granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 c semi-sweet chocolate morsels or a 12-oz pkg
- 6 regular size candy canes
- Preheat oven to 375° F
- Combine flour, cocoa, baking soda and sugars in a small bowl. Beat butter, vanilla extract, and eggs in a large mixing bowl until creamy. Then combine together.
- Stir in morsels and candy canes.
- Drop by rounded tablespoon onto ungreased baking sheets.
- Bake for 8 to 10 minutes. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
